Brown Butter Chocolate Sauce

For Brown Butter Chocolate Sauce

Ingredient

unsalted butter 150 g
dark brown sugar 100 g
dark soy 1 tsp
double cream 120 ml

dark chocolate 40 g
vanilla extract 1 tsp

Directions

  • Slightly brown butter then add sugar and soy stirring immediately

  • Add cream and simmer for 10 mins on low heat

  • Remove from heat and stir in the chocolate and vanilla

Principles

  • Brown butter: milk solid in butter toasted through melting point result in nutty flavor 

Notes

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
  • Sauce thickens when cool
  • Sauce can be kept in a fridge for 1 week
