Garlic & Parmesan Oven Baked Chips

For Chips

Ingredient

Maris piper potatoes 500-600 g
duck fat
salt

garlic minced 4-5 cloves 
flat parsley finely chopped 1 handful

Toppings

Parmesan 30-40 g

Directions

  • Bake the potatoes at 200c for 45 mins until tender then cool completely/ chill overnight

  • Cut into chunky chip/fry shapes

  • Coat them in the duck fat and add a generous pinch of salt

  • Preheated baking tray spread chips over then bake at 220c for 30 mins turning half way through

  • Mix the garlic and parsley to chips for the final 2 mins

  • Grate over the Parmesan and toss them well whilst hot
