Whipped Feta with Slow Roasted Tomatoes and Chilli

For Tomato

Ingredient

tomatoes 8-10 pc
garlic 6-8 cloves
mild chillis 3-4 pc
olive oil 3-4 tbsp
salt & pepper

Garnish

dill
olive oil
black pepper 

For Whipped feta

Ingredient

feta cheese 200 g
natural yoghurt 2 tbsp
lemon zest & juice 1 pc
salt & pepper

Directions

  • Slice tomatoes and chilli in half and remove chilli seed

  • Add the tomatoes, chilli and garlic to a roasting tray and drizzle with olive oil, season with salt and pepper

  • Roast at 120c for 50-60 mins then allow to cool

  • Blend the feta, yoghurt, lemon zest & juice, roasted garlic,  juices from the roasting tray with a pinch of salt and pepper 

  • Spread the whipped feta on a plate and top with the roast tomatoes and chilli

  • Finish with fresh dill, pepper & a drizzle of olive oil
