Sticky Date Pudding

For Date Pudding

Date paste

medjool dates 230 g
water 200 ml
tea bag 1 pc
bicarbonate soda 1 tsp

Wet Ingredient

butter 80 g
black treacle 2 tbsp
muscavado sugar 100 g
large eggs 2 pc

Dry Ingredient

plain flour 180 g
baking powder 2 tsp
salt 1 pinch

For Sauce

Ingredient

butter 80 g
muscavado sugar 150 g
black treacle 2 tbsp
double cream 200 ml
sherry wine 50 ml

Directions

  • Preheat oven at 150c and grease baking tin with oil 

  • Roughly chop date

  • Add date, water, tea bag and soda into pan reduce until soft and thicken then remove tea bag

  • Whisk butter, treacle and sugar together then add egg one at a time

  • Add date paste into egg mix

  • Fold in dry ingredient 

  • Bake at 150c for 30 mins until cooked through

  • Bring all sauce ingredients to boil

  • Serve with ice-cream and sauce

Principles

  • Bicarbonate soda: helps soften dates 
  • Fold in flour: minimize gluten development result in lighter instead of tougher product

Notes

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
  • It is important to preheat oven in the beginning for pastry making
