Choc Mix

dark chocolate 240 g
unsalted butter 60 g
instant coffee 1 tsp

Egg Mix

large eggs 2 pc
light brown sugar 60 g
caster sugar 60 g

Dry Ingredient

plain flour 90 g
baking soda 1 tsp
dark choc chips 60 g


sea salt
choc chip


  • Melt choc mix over simmering water and set aside to cool for 5 mins

  • Whisk egg mix until light and foamy

  • Add chocolate mix to egg mix until combine

  • Sieve flour and soda into the mix and fold through gently together with chips

  • Preheat oven to 180c

  • Divide mix into 8 on parchment lined baking tray

  • Bake at 180c for 12 mins

  • Finish with a few more choc chips and a pinch of sea salt


  • Fold in flour: minimize gluten development result in lighter instead of tougher product


  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
  • It is important to preheat oven in the beginning for pastry making
  • Leave room between cookies to spread
