Garlic Chilli Sauce

For Sauce

Ingredient

garlic 15 cloves
fresh ginger 10 g
chilli 1 pc

Spice

chilli powder 3 tbsp
ground cumin 1 tbsp

Sauce & Seasoning

tomato purée 2 tbsp
caster sugar 2 tbsp
water 300-350 ml

glucose/honey 1 tbsp
cider vinegar 1 tbsp
lemon juice 1 squeeze
salt 1 tsp

Directions

  • Dice ginger, slice chilli

  • Lightly toast the garlic, ginger and chilli in a splash of oil

  • Add then the chilli powder and cumin stir for 30 seconds

  • Add the tomato purée cook for 1 minute 

  • Add water and sugar simmer over a low heat until the garlic tender

  • Add the vinegar, lemon, salt and glucose/honey cook out for 10 mins then cool

  • Add to a blender and blitz until smooth
