Spicy Pulled Pork

For Pulled Pork

Ingredient

pork collar

Rub Spice

ground cumin 1 tbsp
ground cinnamon 1 tsp
ground cloves 1 tsp
garlic powder 1 tbsp
cayenne pepper 1 tbsp
smoked paprika 1 tbsp
dried oregano 1 tbsp
red chilli flakes 1 tsp
dark brown sugar 2 tbsp

Others

cold water/cider vinegar
beer/cider

Directions

  • Mix rub spice and cover the pork with rub for at least 1 hour at room temp

  • Roast at 110c and spritz with cold water/cider vinegar every hour until reaching internal temp of 72-74c

  • Set aside and wrap tightly in foil with a hefty splash of beer/cider until reaching internal temp of 95-96c 

  • Remove from wrap and rest for at least 90 mins then pull
