Greek Style Salad

Ingredient

medium cucumber 1 pc
medium red onions 2 pc
medium tomatoes 6 pc
dill 1 handful 
Kalamata olives 50-60 g
feta cheese 150 g

Dressing

olive oil 120 ml
red wine vinegar 2 tbsp
capers 2 heaped tbsp
dried oregano 1 tbsp
salt generous pinch
white pepper 1 tsp

Croutons

wholewheat bread

Directions

  • Peel the cucumber and remove the seeds then slice it into 0.5 cm thick

  • Thinly slice the red onion

  • Dice the tomatoes into a chunky dice

  • Roughly chop the dill

  • Mix olive oil, vinegar, capers, oregano, salt and pepper to make dressing

  • Add all ingredients and dressing together and sit for 15-20 mins

  • Cut the bread into large croutons and bake at 200c for 10-15 mins until crispy

  • Serve the salad over the top of the croutons
