milk for blanching
oil for frying

Directions

  • Finely slice garlic

  • Blanch in hot milk for 20 seconds

  • Remove centre stalks and pat dry

  • Fry in hot veg oil until crispy

Principles

  • Blanching in milk: neutralize strong garlic taste

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
