Wild Garlic Chimichurri

For Chimichurri


flat leaf parsley 80 g
fresh oregano 10 g
wild garlic leaves 10 pc
garlic 2 cloves
sea salt 1 pinch 
hot water 1 splash
chilli flakes 2 tsp
red wine vinegar 30 ml
olive oil 100 ml
salt to taste


  • Finely chop parsley, oregano, wild garlic and garlic 

  • Add to a bowl with a generous pinch of salt and stir in a splash of hot water sit for 10 mins 

  • Add chilli flakes, red wine vinegar and olive oil and season to taste

  • Sit for 2-3 hours before serving 


  • Sit before serving: flavor infusion 


  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
  • Chimichurri: a sauce made of finely chopped parsley, minced garlic, olive oil, oregano, and red wine vinegar
