Green Peppercorn Gravy

For Gravy

Ingredient

beef fat/oil 1 tbsp
shallots 2 pc 
garlic 2 cloves

Herbs

green peppercorns 2-3 tbsp
rosemary 1 sprig
bay leaves 2 pc

Liquid

brandy 50 ml
red wine 400 ml

beef stock 1 litre

Seasoning

light soy sauce to taste
sherry vinegar/lemon juice to taste

Directions

  • Finely dice shallot and garlic

  • Soften and gently brown diced shallots with oil and pinch of salt

  • Add garlic, bay, rosemary and peppercorns

  • Deglaze the pan with brandy and red wine reduce until almost syrup-like

  • Add the beef stock and simmer down to reduce until coating consistency

  • Season to taste with soy sauce and sherry vinegar

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
  • Gravy: a sauce made by mixing the fat and juices exuded by meat during cooking with stock and other ingredients
