salt 90%
sugar 10%
mushroom powder

Directions

  • Season chicken breast with the cure and leave uncovered on rack in fridge for 1 hour

  • Hot pan and sear chicken skin side down 

  • Turn over and add a knob of butter then baste 

  • Roast at 200c fan for approx 10 mins until internal temp of 72c then rest until 75c
