Ingredient

large courgettes 2 pc

Batter

potato starch/rice flour 50 g
plain flour 100 g
salt 1 tsp
baking powder 1 tsp
chilli powder 1 tsp
sparkling water 180-200 ml

Dusting

plain flour 30 g
salt 1 pinch

For Mayo

Ingredient

mayo 4 tbsp
French’s mustard 1 tbsp
honey 1 tbsp
lemon 1 squeeze

Serving

salt

oil for frying

Directions

  • Cut the courgette in batons

  • Mix the batter ingredients until loose batter

  • Dust the courgettes in seasoned plain flour then dip into the batter

  • Fry at 180c for 3-4 mins until crispy 

  • Serve immediately with salt and lemon

Principles

  • Sparkling water in batter: carbonation result in light and crispy crust

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
