Coleslaw

Ingredient

small white cabbage 0.5 pc
medium red onions 2 pc
medium carrots 2 pc

salt
cold water

For Dressing

Ingredient

mayo 4 tbsp
buttermilk 2 tbsp
whole grain mustard 1 heaped tsp
Sherry vinegar 1-2 tsp
chopped chives 2 tbsp
black pepper

Directions

  • Shred cabbage, cut onion slice and grate carrot

  • Salt the shredded cabbage for 30 mins 

  • Rinse in cold water and squeeze out the moisture

  • Mix the mayo, buttermilk, mustard, vinegar, black pepper and chives

  • Add the cabbage, onion and carrot mix well and season to taste

Principles

  • Salt cabbage: draw out excess water from cabbage while helping preserve the crispiness

Notes

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
