Crispy Onion Rings

plain flour 100 g
cornflour/starch 100 g
sparkling water/soda water 250-300 ml
(vodka 1 shot)

Spice & Seasoning

white pepper 1 tsp
garlic powder 1 tsp
smoked paprika 1 tsp
salt 1 tsp

Coating

Panko breadcrumbs 100 g

Oil for frying

Directions

  • Cut onions into 1 cm thick rings and remove the inner membrane from the onions

  • Chill the onions in iced water

  • Mix the batter ingredients until nice and smooth

  • Dry the onion rings before dipping into the batter then the breadcrumbs

  • Heat oil to 170c and fry the onion rings in batches 

Principles

  • Soak onions into iced water: remove some pungency
  • Soda water in batter: carbonation result in light and crispy crust
  • Fry in batches: remain oil temperature avoid sogginess

Notes

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
