Beer Battered Onion Rings

large onions 2 pc 


iced water
oil for frying

For Beer Batter


plain flour 100 g
cornflour/starch 100 g
baking powder 0.5 tsp
beer 250-300 ml

Spice & Seasoning

salt 2 tsp
white pepper 1 tsp
garlic powder 1 tbsp
smoked paprika 1 tbsp
mild chilli powder 1 tbsp


  • Cut onions into 1cm thick rings and remove the inner membrane from the onions

  • Chill the onions in iced water

  • Mix the batter ingredients without the beer

  • Dry the onion rings before dipping into the flour then take aside

  • Whisking in the beer to form a smooth batter and coat onion rings

  • Heat oil to 175c and fry the onion rings in batches for 5 mins flip over after 2 min


  • Soak onions into iced water: remove some pungency
  • Beer in batter: change in acidity limit gluten formation and carbonation together result in light and crispy crust
  • Fry in batches: remain oil temperature avoid sogginess


  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
