Asparagus with Garlic Brown Butter

For Asparagus

Ingredient

asparagus spears 12 pc
butter 40 g

garlic 2 cloves 
lemon juice 1 squeeze

Toppings

lemon zest 0.5 pc
Parmesan
black pepper

Directions

  • Trim asparagus and thinly slice garlic

  • Add a good splash of water with a pinch of salt and a knob of butter to a pan then add the asparagus

  • Keep rolling it round in the pan to glaze it up until just tender and put aside

  • Add remaining butter to the pan and brown it 

  • Turn off the heat adding garlic and lemon juice

  • Spoon over the brown butter and top with Parmesan, lemon zest and black pepper

Principles

  • Brown butter: milk solid in butter toasted through melting point result in nutty flavor 

Notes

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
