Salsa Verde

For Salsa Verde

Ingredient

flat leaf parsley 100 g
basil 100 g
garlic 2 cloves
anchovy 4 fillets
capers 1 tbsp
lemon juice 0.5 pc
extra virgin olive oil 6 tbsp
salt to taste

Directions

  • Finely slice the herbs with sharp knife

  • Finely chop the anchovies and capers

  • Grate garlic

  • Add to a bowl squeeze on the lemon and stir in the olive oil 

  • Allow to sit for 2 hours before serving and season to taste

Principles

  • Sit before serving: flavor infusion 

Notes

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
  • Salsa verde: a green sauce made of olive oil and vinegar/lemon juice, flavored with parsley, capers, anchovies, garlic, and mustard
