Ingredient

chicken thighs 4 pc
salt & pepper

Romesco Sauce

large charred red peppers 4 pc
ripe tomatoes 2 pc
garlic 2 cloves
almonds 1 handful
flat parsley 1 handful
extra virgin olive oil 2 tbsp
tabasco 1 tsp
lemon juice 0.5 pc
salt & pepper

Garnish

flat parsley

Directions

  • Debone and season chicken thighs 

  • Render the fat of thighs skin side down until crisp on medium-low heat

  • Flip them over cooking until cooked and rest

  • Blend all sauce ingredients until smooth and warm gently to serve

  • Garnish with more fresh parsley
