Ingredient

whole chicken 1 pc

Marinade

whole chillis 2 pc
red pepper 1 pc
white onion 1 pc
garlic 6 cloves
worcestershire sauce 1 tbsp
sherry vinegar 1 tbsp
olive/chilli oil 4 tbsp
dried oregano 1 tbsp
smoked paprika 2 tbsp
light brown sugar 2 tbsp

Directions

  • Butterfly chicken

  • Blend all marinade then marinate chicken overnight

  • Bake at 220c for ~45 mins and rest to serve

Principles

  • Resting: allow the meat to relax and the juices to redistribute result in a more flavorful and tender chicken

Notes

  • 1 pound=16 ounces=453 g ; 1 tablespoon=15 g ; 1 teaspoon=5 g
  • Peri Peri: a blend of African bird’s eye chili
  • Roast chicken time: ~20 mins/500 g/ 180c with fan
