mussels 1kg
bacon fat 10 g
salted butter 30 g
shallot 1 pc
garlic 1 clove
shipyard beer 500 ml
flat parsley 1 handful

Directions

  • Chop shallot, garlic and parsley

  • Add bacon fat, shallot and garlic until fat is rendered

  • Chuck in the butter, mussels and beer then cover with lid

  • Cook for 3 mins and give the pan a shake every 30 seconds until fully open

  • Stir in the parsley and serve with crusty bread
